Our mill is the Osttiroler commercial combi mill: A 700 MSM, manufactured in Austria by the Green family, made out of pinewood, and using specially cut stones to guarantee the best quality flour. It sits proudly at the end of the Grana kitchen, between the stairs to Lana and Apollonia.
We have chosen to mill our own grains so our bakers have better control over the flour – as we can combine the grains that we choose and we can mill them to our liking – providing better dough, and giving us a more bespoke and unique flavour profile and consistency.
It also allows us a stronger connection to the farmers, a closer connection to our product, and gives a true authenticity that allows House Made Hospitality to live their values.
